🍴 How to Make Melty Brie in Air Fryer
This recipe comes together fast—like, “I didn’t know brie could be this easy” fast. A quick wrap, a brush of egg wash, and into the air fryer it goes. You’ll have a melty, golden masterpiece in under 30 minutes.
Want to skip ahead? Scroll down to the recipe card for step-by-step instructions with cook times and tips.
- Preheat Your Air Fryer – Set it to 380°F and let it warm up.
- Prep the Brie – For extra gooey vibes, slice off the top rind.
- Get the Puff Pastry Ready – Make sure it’s thawed. If your brie wheel is large, roll the pastry out slightly on a floured surface.
- Wrap It Up – Place the brie in the center, top it with preserves, and fold the puff pastry corners toward the middle, wrapping it like a cozy blanket.
- Egg Wash It – Whisk your egg and brush it all over the pastry. Avoid letting it pool in the folds.
- Air Fry – Carefully place it in the air fryer basket and cook at 380°F for 20–25 minutes, until golden brown and flaky.
- Let It Rest (Or Not) – Slice into it right away for maximum gooeyness, or let it rest 5 minutes if you want a slightly firmer cheese.
🔥 Pro Tips for Perfect Air Fryer Brie
- Cut Off the Top of the Rind Only – Removing just the top of the rind helps that gooey cheese flow out when you slice into it. Leave the rest of the rind, though. Otherwise, the brie may ooze out and not have any structure.
- Serve It Up Right – Pair with sliced baguette, crackers, nuts, or fresh fruit for a perfect spread. You really cannot go wrong!
- Don’t Skip the Egg Wash – That golden, bakery-style crust comes from a solid egg wash. Be sure to brush the sides, too, for an even color.
- Roll Out for Bigger Brie – Using a larger brie wheel? Lightly roll your puff pastry on a lightly floured surface so it wraps fully without tearing.
- Seal the Pastry Tight – Wrap the cheese so that the puff pastry meets on top of the brie. If you have a crack or gap at the bottom, the brie may leak out. Press and pinch any seams as you wrap. This keeps the cheese sealed in and avoids leaks mid-air fry.
- Watch the Last 5 Minutes – Every air fryer is a little different. Keep an eye on it near the end so you get that perfect golden brown without overdoing it.
- Let It Rest… Or Don’t – Resting it for 5 minutes gives cleaner slices, but if you want that dramatic cheese-pull moment, serve it hot and fresh.
🔁 Substitutions and Variations
This air fryer brie is super versatile, so don’t be afraid to make it your own. Whether you want to switch up the flavor profile, add texture, or lean into seasonal ingredients, here are some tasty ideas to try.
- Switch Up the Preserves – Not feeling wild blueberry? Go with raspberry, blackberry, fig, or even apricot. Want something with a kick? Pepper jelly or hot honey adds a sweet heat that’s next-level with brie.
- Add a Crunchy Surprise – Sprinkle chopped nuts like pecans, walnuts, or pistachios over the preserves before wrapping. They bring a buttery crunch that balances the creamy cheese.
- Go Savory Instead of Sweet – Not into the fruity vibe? Swap the preserves for caramelized onions, roasted garlic, or a smear of Dijon mustard and fresh thyme for a savory twist.
- Try a Brie Alternative – Camembert works just as well if you want a slightly earthier flavor. Just make sure it’s a whole wheel so that it holds up well in the air fryer.
- Play With the Pastry – No puff pastry? Crescent roll dough or even phyllo dough can work in a pinch—just adjust your layering and cook time slightly to make sure it crisps up nicely.
- Top It After Cooking – Want to add a fresh touch? Once it’s cooked and sliced, drizzle it with a little honey or balsamic glaze and top it with fresh herbs like rosemary or basil for a burst of color and flavor.
🧊 Storing, Reheating Tips, and Make-Ahead Tips
If you have leftovers (honestly, rare but possible), you can store the air fryer brie in an airtight container in the fridge for up to 2 days.
To reheat, skip the microwave if you want to keep that pastry crispy—pop it back in the air fryer at 350°F for 5 to 7 minutes. That brings the cheese back to melty perfection while re-crisping the puff pastry. Just keep an eye on it, so the edges don’t get too dark. It won’t be quite as gooey as when it’s fresh, but it’s still ridiculously tasty the next day.
Plan ahead and prepare this air fryer brie the day before. Assemble the brie up to the point of baking, wrap it securely in plastic wrap, and refrigerate for up to 24 hours. When you’re ready to serve, remove the plastic wrap, apply the egg wash, and air fry as directed. Cross one more thing off that to-do list!
🧀 Get Cheesy With It
❓ Questions and Answers
Yes! Assemble and refrigerate it (unbaked and wrapped) up to a day in advance. Just egg wash it right before air frying. And maybe tack on an extra 2–3 minutes of cook time if it’s coming straight from the fridge.
Nope! It’s edible. But removing just the top gives you that ultra-melty center without the cheese running everywhere.
It’ll crack when you unfold it. Give it time to soften at room temperature or microwave it for 10 seconds at a time until workable. Don’t over-microwave it!
This recipe works best with a wheel of brie or camembert because of their creamy centers and edible rinds. Other cheeses won’t hold up as well or might leak everywhere in the air fryer.

Gooey Air Fryer Brie in Puff Pastry
Equipment
Ingredients
- 1 8-12oz Brie Cheese, larger wheel also works; see notes
- ⅓ cup Preserves, wild blueberry, or your favorite
- 1 sheet Puff Pastry, thawed
- All-Purpose Flour
- 1 Egg
Instructions
- Preheat your air fryer to 380°F.
- Prepare your brie cheese. If you prefer a more gooey brie cheese, cut off the top rind from the wheel of brie.
- Ensure your puff pastry is fully thawed before unfolding it. If you have a larger wheel of brie, gently roll it out using some all-purpose flour to dust your work surface.
- Place the wheel of brie in the middle of the puff pastry and add the preserves to the top of the brie.
- Start at a corner of the puff pastry and fold it up to the center of the brie. Work your way around until the puff pastry completely wraps the brie.
- Crack your egg into a small bowl and whisk it. Brush the egg all over the puff pastry, including the sides. Be sure that the egg doesn't pool in the folds of the pastry.
- Transfer the brie to the air fryer basket and cook at 380°F for 20-25 minutes or until the puff pastry is golden brown.
- Use a spatula or turner to carefully remove the brie from the air fryer basket. Place the brie on your serving dish.
- Slice in right away for a gooey cheese, or let it rest for about 5 minutes before slicing if you prefer a firmer cheese. Serve with your favorite bread, crackers, nuts, or fruit.

Notes
- You can also use a large wheel of brie cheese. I have tested this recipe with a 12oz wheel of brie and also a wheel that is about 20oz. For the larger wheel, you will need to roll the puff pastry out until it is large enough to cover the brie completely.
- For a larger wheel of brie, you will need to add about 5 minutes to the cooking time to achieve the same gooey result.
- I like to remove the top of the rind from the brie. This makes it a bit easier when slicing into the brie after it is cooked and also allows the brie to ooze out after it is cut into.
- Don’t remove the rind from the sides or bottom of the brie. Then you may end up with the brie melting, and if the puff pastry has a hole or weak spot, the cheese may flow out into the air fryer.
