- ½ yellow onion chopped
- ⅓ cup cilantro fresh, chopped, and divided
- ½ tsp salt
- ½ tsp cumin powder
- 3 avocados medium
- 4 tbsp lime juice
- ⅓ cup pepperoncini chopped
- 2 tomatoes diced
Put the onion, half of the cilantro, salt, and cumin in Molcajete or a food processor. Smash or blend until it turns into a paste.
Add the sliced avocados to the molcajete. Mash to your desired consistency.
Stir in the rest of the cilantro, the lime juice, pepperoncini, and tomatoes. Taste and season with more salt if desired.
Make The Onion Paste
Smashing the onions and cilantro into a paste gives the guacamole more depth of flavor than simply stirring in chopped onions. If you do not have a molcajete, use a standard mortar and pestle or a food processor.
Best Served Fresh
Guacamole tastes best right after it is made. The avocado is brightest, and the tomatoes and pepperoncini keep their best texture when served fresh.
Storing Leftovers
If you have leftovers, sprinkle lime or lemon juice over the top, then press plastic wrap directly onto the surface of the guacamole so air cannot reach it. Store in the refrigerator for up to 2 days.
