Ingredients

  • 1 ½ lb baby potatoes
  • 2 tsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbsp butter melted
  • ¼ cup fresh parsley chopped

Instructions

  • Scrub the baby potatoes clean and place them in a mixing bowl.
  • Toss the potatoes with olive oil then sprinkle them with salt and pepper.
  • Place the potatoes in the air fryer basket. Keep them in a single layer (smaller air fryers will require more than 1 batch).
  • Air fry at 400°F for 12 to 15 minutes.
  • Transfer the baby potatoes to a serving bowl and drizzle the melted butter over them. Toss with the chopped parsley and serve.

Do Not Crowd The Basket

Keep the potatoes in a single layer so the hot air can circulate around them. If your air fryer basket is small, cook the potatoes in batches instead of stacking them.

Potato Size Matters

Cooking time will vary depending on the size of the baby potatoes. Smaller potatoes may finish closer to 12 minutes, while larger potatoes may need the full 15 minutes or a little longer.

How To Tell When They Are Done

The potatoes are ready when they are fork-tender in the center and lightly crisp on the outside. If they are still firm, continue cooking in 2-minute increments.

Add Butter And Parsley After Cooking

Toss the potatoes with melted butter and fresh parsley after they come out of the air fryer. This keeps the parsley bright and fresh while the butter coats the warm potatoes.
